Meredith is a Sustainability Consultant for Springhouse. She is working to make it a more environmentally-friendly restaurant, one step at a time. Originally from Ontario, Meredith moved to Halifax, to attend Dalhousie University. She majored in International Development Studies and Environment, Sustainability, and Society. She graduated with a Bachelor of Arts degree and made the Dean’s List in her final year. During her time at school, she volunteered with the Dalhousie Student Union Farmer’s Market, the Loaded Ladle, Divest Dal, and the Ecology Action Centre.
Her interests lie in conservation, specifically, the reduction of single-use plastics. She practices a low-waste lifestyle and loves supporting local businesses. Meredith is influenced and inspired by those around her, Halifax’s proximity to nature, and especially by living on the ocean.
She has been with Springhouse for over two years and has been vegan for five years. In this role, Meredith hopes to inform and educate others on environment-related topics and inspire them to be more eco-conscious consumers.
